The landscape of any farm is the owner's portrait of
himself.
~Aldo Leopold

Featured Farms
The following is a list of some of the farms currently utilized
by the Oconomowoc Lake Club. In 2011 we purchased 32% or $65,000 dollars
from local area farms. In the last six years the total is over
$325,000 dollars. It is much more than just dollars, it's building
relationships! We proudly feature pasture raised or grass based farming.
There are many benefits of pastured raised meats and dairy. It is a building process;
each year we hope to buy a little bit more. "Once you start, you
never want to go back." -JK
Buying directly helps in many ways. Farmers normally get 10-30% of the
retail dollar but by buying directly, they receive up to 100%. That same
money then re-circulates from 3 to 5 times in the local community.
Instead of receiving farm gate prices or commodity prices, farms are
paid a just and sustainable price for their food. Farmers are willing to
grow unique and diverse foods for us. Some of our best food is grown
just down the road, not half way around the world. Farmers markets are
one of the best ways to scout for new farmers, but remember not all
farmers go to markets. Farmers can often lead you to other farmers,
especially for the ones who do not go to markets.
"Finding a new farmer or locally grown food is like finding a new
treasure." -JK

Every day several samples, (taken while bottling), are checked for
flavor, color and density to ensure that our products are always the
highest quality. Our syrup is boiling just before it goes into
the bottles. This extra step ensures the freshest flavor
possible. Many companies skip this step.

We have been certified organic since 2000 with approximately 700
acres of cropland in the green valleys near Foster, WI. The organic
dairy herd of 125 cows was added in 2003 with the bottling facility
being added in 2005. Being committed to organics and getting a
quality product to consumers, we bottle non-homogenized, low temp
vat pasteurized creamline milk and make premium quality ice cream
and artisanal cheese. By feeding the soil properly and allowing
crops to feed on enriched soil, our animals become servants; pass on
essential nutrients to consumers. Our glass bottled milk, premium
quality ice cream and artisanal cheese bring back the taste of times
gone by. We do not pool our milk giving us total control of the
product from start to finish. Direct from the farm to you the
consumer. "The Way Nature Intended". Our oldest grandchild is 16 and
they are the 5th generation of farmers in our family.

Edelweiss has the distinction of being
the only North American maker of traditional 180-pound Big
Wheel Swiss. Master Cheesemaker Bruce Workman insists on
time-honored techniques, handcrafting the Swiss in a traditional
copper kettle from Switzerland. Milk is supplied by nearby dairy
farms set in the rolling hills of Green County, Wisconsin's
legendary cheese epicenter. Edelweiss also crafts several additional
specialty varieties, including Butterkäse,
Havarti, Grass-Based Cheddar,
Gouda and Emmentaler. The creamery
recently partnered with Edelweiss Graziers Co-op, an organization of
three local farm families, to bring a pure but complex flavor
profile to a line of cheeses made from the milk of pastured,
grass-fed cows.

Sorghum Mill
Richard Wittgreve
N9030 Little Elkhart Lake Road
Elkhart Lake, WI 53020
(920) 876-2182
Richard became interested in sorghum syrup in 1984, when he could
not find a jar of sorghum syrup to purchase. In 1985, he decided
that he could produce his own syrup. It wasn't until 1986 that he
successfully raised and processed his first crop, 6 gallons total
production. Over the years, through research and testing, his
operation has grown. In the early 1990's, he made the decision to be
serious about syrup production, rather than just a hobby, and built
his certified food-processing operation. In 1996, he started to
build mechanical harvesting equipment, and today, his harvest is
fully mechanical. In 1998, he installed a high-pressure steam boiler
which allows him to do preheating and to cook by steam. Today, he
produces over 1300 gallons annually. His assistant, Marcia, in
charge of sales and marketing, sells to retail markets throughout
the state of Wisconsin and does mail order throughout the United
States. Marcia also spends considerable time at farm markets and
special-event shows. Rich also owns Percheron draft horses and
operates Queen Anne Carriage Rides, giving carriage and hay rides in
his local resort town of Elkhart Lake.
